Sotol is from northern Mexico, where the plant has been consumed for over 800 years. By Denomination of Origin, sotol as a spirit can only be made in three Mexican states: Chihuahua, Coahuila, and Durango. At Sotol Romo, every bottle comes from the high deserts of Chihuahua — the heart of sotol country.
Not the Mexican beaches. Not Jalisco. It comes from the north of Mexico. From the vast Sierra Madre. From a desert land that is as unforgiving as it is extraordinary. And it is that specific terroir, that specific landscape, that makes Sotol Romo what it is.
There is a reason why sotol has a Denomination of Origin covering only three states (Chihuahua, Coahuila, and Durango). Because you cannot replicate what that terrain does to a plant over 15 to 20 years. It is simply impossible.
