Sotol is from northern Mexico, where the plant has been consumed for over 800 years. By Denomination of Origin, sotol as a spirit can only be made in three Mexican states: Chihuahua, Coahuila, and Durango. At Sotol Romo, every bottle comes from the high deserts of Chihuahua — the heart of sotol country.

There is a reason why sotol has a Denomination of Origin covering only three states (Chihuahua, Coahuila, and Durango). Because you cannot replicate what that terrain does to a plant over 15 to 20 years. It is simply impossible.
