Sotol is a Mexican distilled spirit made from the sotol or dasylirion plant, a wild desert species that grows in northern Mexico. With over 800 years of history and a Denomination of Origin protecting its production in Chihuahua, Coahuila, and Durango, sotol stands as Mexico’s third great spirit — alongside tequila and mezcal.
