While tequila remains dominant, Mexico’s alternative agave spirits are also gaining ground, following in the footsteps of mezcal, now a global category. Sotol Romo founder Claudia Romo Edelman describes sotol as “one of Mexico’s most authentic and least understood spirits”. She says: “It is often referred to as the ‘third pillar’ of Mexican spirits, alongside tequila and mezcal, but it is fundamentally different,” she explains.
