Romo Edelman is launching Sotol Romo, a premium epression of sotol-the traditional spirit of Northern Mexico made not from agave but from dasylirion (desert spoon). In Mexico, sotol carries a Denomination of Origin (2004) restricted to Chihuahua, Coahuila, and Durango.
